Churros
The definition of a perfect treat. And they are super simple to make! They are best served fresh.
Ingredients:
1 cup water
8 tbsp of butter
2 tbsp sugar
1/2 tsp salt
2 tbsp vanilla extract
3 eggs
Cinnamon and sugar
Instructions:
In a medium pot over medium heat, mix the water and butter until melted
Add in the salt, vanilla and sugar, mix
Let it cool completely, then
Add eggs one by one
Boil 2 cups of oil in a pan
Put the dough in the piping bag, and fry
Roll the churros in cinnamon and sugar immediately
Enjoy!
Peanut Butter Cups

Ingredients:
1/2 cups chocolate chips
1 tsp coconut oil
Filling:
1/4 smooth peanut butter
a pinch salt
1 tsp maple syrup
1/2 a tsp vanilla extract
Instructions:
Melt the chocolate and coconut oil in the microwave or a double boiler
Pour a tablespoon of the melted chocolate into a mini muffin cup.
Pour some of the peanut butter fining into the center and press down lightly.
Cover with another tablespoon of melted chocolate and freeze until solid.
Healthy Apple Spice Muffins
Healthy apple spice muffins are so delicious, you will forget that they are good for you!

Ingredients
½ cup unsweetened applesauce (natural)
¼ cup oil
¼ cup agave syrup or honey
1 teaspoon vanilla extract
1 ½ teaspoons cinnamon
½ teaspoon ground ginger
¼ teaspoon nutmeg
1 teaspoon baking soda
1 teaspoon baking powder
⅓ cup sugar or dry sweetened such as splenda or stevia (8 splenda packets)
2 eggs
1 cup milk or soy milk
2 apples, peeled and very finely diced
2 cups white whole wheat flour
Directions
Add the vanilla, cinnamon, ginger, nutmeg, baking soda, baking powder and sugar/sweetener. Whisk to combine.
Add the eggs and milk, and whisk to combine.
Switch from the whisk to a spoon.
Add the finely diced apples and stir to combine.
Add the flour and stir until incorporated.
Spoon the mixture into the prepared muffin pan, filling the cups until almost full.
Bake at 350 for 16-18 minutes.
Enjoy!
Pumpkin Crumb Cake
While I won’t say they are healthy, they have very little oil, you can easily leave out the chocolate chips, and I used coconut sugar instead of the (not so much) brown sugar-which makes it healthier than most muffins. But you wouldn't know that if you tasted them!

Ingredients
Crumbs (see note)
1/3 cup sugar
3/4 cup brown sugar
3 tsp cinamon
pinch of salt
1 3/4 cups flour
3/4 cups oil
Cake
1 cup oil
1 cup sugar
1/2 cup brown sugar
2 eggs
1 cup pumpkin puree (not pie filling)
1 1/2 tsp vanilla extract
2 tsp cinnamon
1 tsp baking powder
1 tsp baking soda
1/2 tsp salt
2 1/2 cups flour
Directions
Preheat oven to 350
Crumbs
Combine sugars, cinamon, salt, and flour in a small bowl
Add oil, mix until crumbs form, set adside
Batter
Beat oil and sugars until smooth
Add eggs, pumpkin puree, vanilla, cinnnamon, baking powder, baking soda, and salt, beat until combined
Add flour gradually, mixing in between. Do not overmix.
Pour batter into a greased 9x13 pan
Cover entire surface with crumbs (see note)
Bake for about 1 hour
Notes
You can easily leave out the crumbs if you wish, it will still taste perfect
You can either pour all the crumbs on (there will be a very thick layer) or only use half (healthier that way;)), and either use other half on a later time, or turn into apple or pear crumble.
Banana Muffins

Ingredients
1 ¼cup flour
1 ¼ cup oats
1 tsp baking powder

1 cup applesauce or 3-4 bananas
½ cup milk
½ cup brown sugar (see note)
2 Tbsp oil
1 egg
¾ cup chocolate chips
Directions
If using bananas, blend and set aside
Preheat oven to 375
In a separate bowl, mix all the dry ingredients
Add milk, brown sugar, oil and egg, mix
Add bananas or applesauce, mix
Add chocolate chips
Pour into muffin tins (see note)
Bake for 20 minutes
Let it cool before eating
Notes
I like to use coconut sugar instead (its healthier) and it has the same look and texture as brown sugar. I don't like the taste of coconut at all, but you wouldn't know the difference in this recipe-don't worry.
If you want to make mini muffins, then bake for 7-10 minutes
Zebra Cookies
The first treat I baked as a kid, and I haven't stopped making these real crowd-pleasers since.

½ cup oil
2 cups sugar

How to create:
Preheat oven to 350
Mix in all the ingredients
Roll into cookies
Roll the cookies in confectioners sugar
Bake for 10 minutes

Banana Bread
A super easy melt in your mouth banana treat

What you'll need:
4 cups flour
2 cup sugar
2 tsp of baking powder
2 tsp salt
1 tsp of baking soda
4 eggs
1 cup margarine/ oil
4 cups of bananas (6-8 bananas)
How to create:
Preheat oven to 350
Mix flour, sugar, baking powder, salt, and baking soda
In the same bowl, put in eggs and oil
In a separate bowl, blend bananas
Pour the bananas into the ingredients bowl
Bake uncovered for 65-75 minutes
Yields: Half-size pan
Lemon Pancakes
Lemon is my favorite flavor pancakes, and this recipe uses basic ingredients you probably already have. You can use any type of berries—they all go with lemon—or omit them entirely if you prefer. With crispy edges and fluffy centers, these lemon beauties will add some sun to your day (especially if you convince someone else to make them for you!).

Ingredients
½ cup sugar
2 tbsp oil
2 eggs
1 cup milk (dairy or non-dairy)
1 ⅓ cups all-purpose flour
2 tsp baking powder
Pinch of salt
Juice of 1 lemon (at least 2 tbsp)
1 cup berries of your choice (fresh or frozen), roughly chopped
Oil for frying
Optional: chopped dark chocolate, chopped nuts
How to create
Mix the sugar and oil. Add in the eggs and mix well.
Alternate the flour and milk until batter is smooth. Add the baking powder, salt, and berries. Stir through the lemon juice. Let batter sit for 10 minutes.
Heat a skillet over medium heat. Pour in a tablespoon of oil and swirl to coat the pan. Use a ¼ cup or ⅓ cup measuring cup to pour out the batter. For smaller pancakes, use a ⅛ cup. Fry as many pancakes as you can at a time, leaving a little space between them (this will depend on the size of your pan). Cook until the surface is covered with small bubbles. Then flip the pancake and cook very briefly on the second side. Remove from pan.
Repeat, adding a new tablespoon of oil each time, until all the batter has been used.
Yields: 8 large pancakes
Best Classic Chocolate Cake
Not a one bowl recipe-but it's worth it. I made the batter (I'll admit, I'm kinda slow at that) in 10 minutes, tops. It's he absolute yummiest chocolate cake. It has a distinct coffee flavor-whether you like coffee or not you'll enjoy it-but you can add more coffee for more of its taste. A must-make!

Separate bowl: combine all dry ingredients but cocoa
Mix cocoa and coffee

Gluten-Free Apple Crisp
The dessert I share here is one that will surprise you with its simplicity and its absolute deliciousness. Best of all, it is sugar-and-potato-starch-free. Which is a good thing even if you're not health-conscious, because potato starch can get boring after a while!

Ingredients
Filling
5-6 pink lady apples, peeled and chunked
3/4 cup Haddar Unsweetened Applesauce
1/2 teaspoon cinnamon
Crumble
1 cup Gefen Almond Flour
1/2 teaspoon cinnamon
1/2 teaspoon pumpkin pie spice
1 teaspoon Gefen Vanilla Extract
3 tablespoons coconut oil, at room temperature
Directions
Prepare the Filling
Preheat oven to 350 degrees Fahrenheit.
Combine chunked apples with applesauce and cinnamon.
Place in a lightly greased 10-inch round casserole dish or glass Pyrex dish (I do not suggest using an aluminum pan). You can also divide the mixture into ramekin cups.
Prepare the Crumble
Mix all crumble ingredients together with a spoon until the mixture gets crumbly.
Sprinkle over apple mixture and bake uncovered for one hour.
Customizable White Cake

What you'll need:
1 cup margarine
2 cups sugar
4 eggs
3 ½ cups flour
½ tsp salt
4 tsp of baking powder
1 ⅓ cup almond milk
2 tsp vanilla extract
How to create:
Preheat oven to 350
Mix all the ingredients
Customize:
Pour 2 cups of blueberries after the batter is already in the pan.
Mix sugar and cinnamon (equal parts) and pour over the batter once it is in the pan
Mix 1 cup of chocolate or caramel chips into the batter before putting it in the pan
Slice apples and cover the batter with it once it is in the pan
Melt chocolate and swirl it in the batter (once in the pan) with a toothpick
Put it in a pie crust

Healthy Apple Berry Crumble
Usually I believe healthy dessert=gross, just eat a fruit, but this is different. Try it!

Ingredients:
4 apples, peeled and sliced thin
1 cup frozen strawberries, thawed and chopped
½ cup frozen blueberries, thawed
1 Tablespoon cinnamon
For the crumble:
1 cup oatmeal
2/3 cup white whole wheat flour
1/3 cup ground walnuts
¾ cup sweetener of your choice* (18 splenda packets, if using)
1 teaspoon cinnamon
1 egg white
3 Tablespoons oil
Instructions:
Preheat oven to 350.
Combine the apples, berries and cinnamon in a large bowl. Toss to coat the cinnamon evenly.
Bake in a large pan for 30-40 minutes, until soft. Spoon into ramekins.
Prepare the crumble: combine all ingredients and stir until coarse crumbs form. (This is best done with your fingers, you don’t want to over mix.)
Spoon the crumble mixture over the fruit in the ramekins. Bake at 350 for an additional 20 minutes.
Serve hot.
*Note about the sweetener – use which ever dry sweetener you like and consider healthiest. You can use sugar, stevia, splenda, xylitol, etc. Whichever you choose, make sure to use 3/4 cup worth.
*You can try muffin tins instead of ramekins

¾ cup all-purpose flour
¾ cup brown sugar
½ cup old-fashioned rolled oats
6 tbsp unsalted butter or margarine
3 medium red apples
3 medium green apples
1 cup apple juice
½ cup of honey
2 tsp cinnamon

How to create
Preheat oven to 475
Streusel- In medium bowl, combine flour, brown sugar, oats, and melted butter/margarine
Pinch to form coarse crumbs
With a melon baller, carefully scoop out the core, creating a “bowl” 2 inches in diameter, being careful not to ruin the sides or bottom
Fill each apple with the Streusel filling, arrange in 9x9 inch shallow baking dish
In a small bowl, stir apple juice, honey, and cinnamon. Pour into the baking pan.
Bake uncovered for 25-30 minutes or until apples are tender (if Streusel starts to burn, loosely cover with foil)
Drizzle apples with pan juices or caramel and serve with ice cream

Chocolate Meringues with Raspberry Dipping Sauce
You can make it for Pesach (or if your city, like mine, doesn't have flour or regular sugar nowadays) or all year round! Thanks Mia for sending the recipe to me!

Ingredients:
For Meringue
2 large egg whites, at room temperature
4 tablespoons confectioners' sugar, sifted
3 teaspoons cocoa powder, sifted
pinch kosher salt
For Dipping Sauce
1/2 cup raspberry jam
1 tablespoon lemon juice
Directions:
Preheat oven to 200°F. Line 2 baking sheets with parchment paper and set aside.
With an electric mixer, beat egg whites until it just holds soft peaks. With mixer running, add a tablespoon of sugar at a time, beating on high until stiff, glossy peaks hold. Gently fold in salt and cocoa powder.
Transfer meringue to a pastry bag fitted with a ½-inch star tip. Pipe 1-inch wide stars about ½-inch apart until you have used all the meringue. If you don’t have a pastry bag or tips, you can fill a gallon Ziploc and trim the tip off. Pipe small circles as you would with a pastry bag.
Bake 1 ½ to 2 hours or until meringues are dry and crisp. Turn the oven off and cool in the oven with the door propped open for 1 hour.
In a small bowl, combine jam with lemon juice and stir to loosen. If still too thick, add a few drops of water until jam is the right consistency to use as a dipping sauce.
Cinnamon Buns
We all know the familiar cinnamon bun sweet taste. Who can resist them? Not me! If for some reason you never ate them...now is the time.

Main ingredients
For the Cinnamon Buns
1/6th of my challah dough recipe
Almond Milk, for brushing
1 and 1/2 cups Confectioners' Sugar
1 and 1/2 tablespoons ground cinnamon
Glaze
1 and 1/2 cups Confectioners' Sugar, plus more as needed
1 tablespoon oil
a few tablespoons boiling water
How to make
Prepare the Buns
Roll out the dough into a large rectangle. Brush evenly with almond milk.
In a bowl, combine confectioners' sugar with cinnamon and generously sprinkle evenly over the almond milk.
Roll the dough into a tight log, pinching the ends shut. Cut into 12 portions and place into a greased 9- x 13-inch baking dish, cradling so none of the filling falls out. Leave some space in between them for the buns to rise.
Preheat the oven to 350°F. Allow to rise 20 minutes then bake for 30 minutes, uncovered. Allow to cool completely before glazing.
Make the Glaze
Mix the confectioners' sugar with the oil and a few tablespoons of boiling water.
Mix well, pressing against the side of the bowl to remove any clumps of confectioners' sugar if necessary. Mixture should be thick as honey. If too runny, add confectioners' sugar a bit at a time. If mixture is too stiff, add boiling water a bit at a time.
Pour into a Ziploc freezer bag, snip a corner and drizzle the glaze over the cinnamon buns in back and forth motions.
